Wild Rice Stuffing
Makes about 7 cups
Ingredients
2 cups wild rice
1 large onion, minced
1 cup finely diced celery
4 cups chicken broth
1/4 tsp. salt
1 cup chopped walnuts
1 cup chopped mushrooms
1/2 tsp. celery salt
1/2 tsp. poultry seasoning
1/3 cup plus 1 tbs. unsalted butter
Directions
In a sauce pan over medium heat, add the rice and 1/3 cup butter. Stir constantly until the rice is lightly browned. Stir in the onion and celery. Cook for 3 minutes. Stir in the chicken broth, rice and salt. Bring the rice to a boil and reduce the heat to medium low. Place a lid on the sauce pan. Simmer for 30 minutes.
In a skillet over medium heat, add 1 tablespoon butter, walnuts and mushrooms. Saute for 5 minutes. Add the mixture to the sauce pan with the rice. Stir in the celery salt and poultry seasoning. Cook for 1 minute. Remove the rice from the heat and serve.
